Ingredients

1 pound boneless, skinless chicken thighs

1 cup flour

2 large eggs

1 cup breadcrumbs (preferably Italian seasoned)

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon Italian seasoning

2 tablespoons olive oil

1/2 cup marinara sauce

1/2 cup mozzarella cheese, shredded

1/4 cup grated Parmesan cheese

Fresh basil leaves for garnish

1 tablespoon balsamic glaze (optional for drizzling)

Instructions

Prepare the Chicken:

    - In three separate shallow dishes, set up your breading stations: Place flour mixed with salt, pepper, and garlic powder in the first dish; whisk the eggs in the second dish; and combine breadcrumbs with Italian seasoning in the third dish.

      Bread the Chicken:

        - Take each chicken thigh, coat it in the flour mixture, then dip it into the beaten eggs, and finally, coat it thoroughly with the breadcrumb mixture.

          Cook the Chicken:

            - Heat olive oil in a large skillet over medium heat. Once hot, add the breaded chicken thighs, cooking for about 5-6 minutes per side until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C).

              Add the Sauce and Cheese:

                - Once the chicken is cooked, lower the heat and pour marinara sauce evenly over the chicken. Sprinkle the mozzarella and Parmesan cheese over the top. Cover the skillet with a lid and let simmer for about 5-7 minutes, or until the cheese is melted and bubbly.

                  Garnish and Serve:

                    - Remove the skillet from the heat and garnish with fresh basil leaves. If using, drizzle with balsamic glaze. Serve hot directly from the skillet for a rustic presentation, or transfer to serving plates.
