2 cups graham cracker crumbs

1 cup unsweetened shredded coconut

1/2 cup finely chopped nuts (e.g., walnuts or almonds)

1/2 cup rainbow sprinkles (plus extra for topping)

1/2 cup unsweetened cocoa powder

1/2 cup almond butter (or any nut/seed butter of choice)

1/3 cup pure maple syrup

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1 cup dairy-free chocolate chips (or regular chocolate chips)

Instructions
 

Prepare the Pan: Line an 8x8-inch baking dish with parchment paper, leaving some overhang on the sides for easy removal later.

    Combine Dry Ingredients: In a large mixing bowl, whisk together the graham cracker crumbs, shredded coconut, chopped nuts, rainbow sprinkles, cocoa powder, and sea salt until well incorporated.

      Mix Wet Ingredients: In a separate bowl, combine the almond butter, maple syrup, and vanilla extract. Mix until smooth and well-blended.

        Combine Mixtures: Pour the wet mixture into the dry ingredients, stirring until everything is fully combined. It should form a thick, sticky dough. If the mixture is too dry, you can add a little more maple syrup or almond butter.

          Incorporate Chocolate Chips: Gently fold in the chocolate chips, reserving a few for the top if desired.
