Instructions

Prepare the cheesecake mousse:

    - In a large mixing bowl, beat the softened cream cheese until smooth using an electric mixer.

      - Gradually add the powdered sugar and vanilla extract, mixing until well combined and creamy.

        - In a separate bowl, whip the heavy cream until stiff peaks form.

          - Gently fold the whipped cream into the cream cheese mixture until fully incorporated.

            Add flavor to the mousse:

              - In a blender, combine the fresh blueberries and lemon juice, and pulse a few times until you have a smooth puree. You can leave a few small chunks for added texture if desired.

                - Gently fold the blueberry puree into the cheesecake mousse until evenly distributed.

                  Chill the mousse:

                    - Divide the cheesecake mousse mixture into serving glasses or bowls. Smooth the tops with a spatula.

                      - Cover with plastic wrap and refrigerate for at least 2 hours to let the flavors meld and the mousse to set.

                        Make the blueberry topping:

                          - In a small saucepan over medium heat, combine fresh blueberries, granulated sugar, cornstarch, water, and lemon juice.

                            - Stir gently until the mixture comes to a simmer and thickens, about 5 minutes. Remove from heat and let it cool.

                              Assemble the dessert:

                                - Once the mousse has set, top each glass with a generous spoonful of the blueberry topping.

                                  - If desired, sprinkle crushed graham crackers on top and garnish with fresh mint leaves.

                                    Serve and enjoy:
