2 cups old-fashioned oats

1 cup almond butter (or any nut butter of your choice)

1/2 cup honey or maple syrup

1/4 cup unsweetened cocoa powder

2 tablespoons instant coffee granules (adjust to taste)

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup dark chocolate chips (optional, for melting on top)

1/4 cup chopped nuts (walnuts or pecans work well)

1/4 cup shredded coconut (optional)

Instructions
 

Prep the Pan: Line an 8x8 inch square baking dish with parchment paper, allowing some overhang for easy removal later. Lightly grease the paper with cooking spray.

    Mix Dry Ingredients: In a large bowl, combine the old-fashioned oats, cocoa powder, instant coffee granules, and salt. Stir until well mixed.

      Combine Wet Ingredients: In a separate bowl, combine almond butter, honey (or maple syrup), and vanilla extract. Mix thoroughly until smooth and creamy.

        Combine Mixtures: Pour the wet ingredients into the dry mixture. Stir until all the ingredients are fully combined. If using, add in the chopped nuts and shredded coconut, mixing until evenly distributed.

          Press into Pan: Transfer the mixture to the prepared baking dish. Using a spatula or your hands, press the mixture down firmly until it forms an even layer. Ensure it’s compacted well for the bars to hold together after chilling.

            Chill: Cover the dish and place it in the refrigerator for at least 2 hours to firm up.

              Melt Chocolate (optional): If you’d like to top your bars with chocolate, melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth. Drizzle or spread the melted chocolate on top of the cooled oat mixture before slicing.

                Slice and Serve: Once chilled and set, use the overhang of the parchment paper to lift the bars out of the pan. Cut into squares or rectangles, as preferred.

                  Store: Store any leftovers in an airtight container in the refrigerator for up to one week.
