1 tablespoon olive oil

1 pound Italian sausage (spicy or sweet, removed from casings)

1 medium yellow onion, diced

3 cloves garlic, minced

1 cup orzo pasta

4 cups chicken broth (low-sodium)

1 cup heavy cream

3 cups fresh spinach, roughly chopped

1 cup cherry tomatoes, halved

1/2 teaspoon red pepper flakes (optional)

1 teaspoon Italian seasoning

Salt and pepper to taste

1/2 cup grated Parmesan cheese

Fresh basil, for garnish

Sauté the Sausage: In a large skillet, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain excess fat if necessary and set the sausage aside, leaving some oil in the pan.

    Cook the Aromatics: In the same skillet, add the diced onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and red pepper flakes, and cook for an additional 1-2 minutes until fragrant.

      Add Orzo and Broth: Stir in the orzo pasta and toast it for about 1 minute. Then, pour in the chicken broth and bring to a gentle simmer. Reduce the heat to low and cook for about 10-12 minutes, stirring occasionally, until the orzo is al dente and most of the liquid is absorbed.
