One-Pan Lemon Garlic Chicken and Asparagus

4 bone-in, skin-on chicken thighs

1 lb asparagus, trimmed

4 cloves garlic, minced

1 lemon, zested and juiced

3 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

¼ teaspoon red pepper flakes (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a small bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, dried oregano, salt, black pepper, and red pepper flakes (if using). Whisk it until well blended.

      In a large oven-safe skillet, place the chicken thighs skin-side up. Pour half of the lemon garlic marinade over the chicken, making sure it's evenly coated. Reserve the other half of the marinade for later.

        Arrange the trimmed asparagus around the chicken thighs in the skillet. Pour the reserved marinade over the asparagus to ensure it’s well flavored.

          Bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through (165°F internal temperature) and the skin is crispy. About halfway through baking, you can stir the asparagus gently to ensure even cooking.

            Once cooked, remove the skillet from the oven. Let the chicken rest for 5 minutes before serving.

              Garnish with fresh chopped parsley for a burst of color and freshness. Serve warm with extra lemon wedges on the side for added zing!
