4 boneless, skinless chicken breasts

2 medium zucchinis, sliced

1 bell pepper (any color), diced

1 cup cherry tomatoes, halved

1 cup broccoli florets

4 cloves garlic, minced

1/4 cup olive oil

Juice of 2 lemons

Zest of 1 lemon

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Prep the Marinade: In a medium bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, paprika, salt, and pepper until well combined.

    Marinate the Chicken: Place the chicken breasts in a large zip-top bag or shallow dish. Pour half of the marinade over the chicken, ensuring it's well-coated. Allow it to marinate for at least 30 minutes (or up to 2 hours in the refrigerator for a deeper flavor).

      Preheat the Oven: Preheat your oven to 400°F (200°C).

        Prepare the Veggies: In a large mixing bowl, combine zucchini, bell pepper, cherry tomatoes, and broccoli florets. Drizzle with the remaining marinade and toss to coat.

          Assemble the Pan: Spread the marinated veggies evenly on a large baking sheet. Lay the marinated chicken breasts on top of the veggies.
