1 cup quinoa, rinsed and drained

2 cups vegetable broth

1 medium zucchini, diced

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 cup broccoli florets

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1/2 teaspoon smoked paprika

Zest and juice of 1 lemon

3 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare the Quinoa: In a medium-sized pot, combine the rinsed quinoa and vegetable broth. Bring to a boil, then reduce to low heat, cover, and simmer for about 15 minutes, until the quinoa is fluffy and the liquid is absorbed. Remove from heat and set aside.

    Sauté the Vegetables: In a large skillet or a deep, non-stick pan, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
