Ingredients

4 salmon fillets (6 oz each)

1 bunch of fresh asparagus (about 1 lb), trimmed

2 tablespoons olive oil

2 tablespoons fresh lemon juice (about 1 lemon)

1 teaspoon lemon zest

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

Lemon slices for garnish

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Asparagus: In a large mixing bowl, toss the trimmed asparagus with 1 tablespoon of olive oil, salt, and pepper. Spread the asparagus out on one side of a large baking sheet.

Prepare the Salmon: In a separate bowl, whisk together the remaining olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper. Place the salmon fillets on the other side of the baking sheet, skin-side down.

Drizzle and Season: Pour the lemon herb mixture over the salmon fillets, ensuring they are well coated.

Bake: Transfer the baking sheet to the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the asparagus is tender yet crisp.

Garnish and Serve: Remove from the oven and garnish with fresh parsley and lemon slices. Serve hot, enjoying the vibrant flavors of the lemon and herbs!
