Ingredients

For the Chicken:

1 lb boneless, skinless chicken thighs (cut into bite-sized pieces)

3 tablespoons soy sauce

2 tablespoons honey

1 tablespoon rice vinegar

2 cloves garlic (minced)

1 teaspoon ginger (grated)

1 tablespoon sesame oil

For the Broccoli:

3 cups broccoli florets (fresh or frozen)

1 tablespoon olive oil

Salt and pepper to taste

For Garnish:

Sesame seeds

Sliced green onions

Optional:

Cooked rice or quinoa (for serving)

Instructions

Marinate the Chicken: In a medium bowl, whisk together the soy sauce, honey, rice vinegar, minced garlic, grated ginger, and sesame oil. Add the chicken pieces and mix until well coated. Let the chicken marinate for at least 15 minutes (or up to an hour in the refrigerator for more flavor).

Cook the Chicken: In a large, deep skillet or a wok over medium-high heat, add the marinated chicken (reserve the marinade) and cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through and lightly browned.

Add Broccoli: Once the chicken is cooked, push it to one side of the skillet. On the other side, add the olive oil and broccoli florets. Season with salt and pepper, and sauté for about 3-4 minutes, or until the broccoli is vibrant green and tender-crisp.

Combine Everything: Pour the reserved marinade over the chicken and broccoli. Stir well to coat and let it simmer for another 2-3 minutes until the sauce has thickened slightly.

Serve: Divide the teriyaki chicken and broccoli into bowls. If desired, serve over a portion of cooked rice or quinoa. Sprinkle with sesame seeds and sliced green onions for garnish.

Enjoy: Dig in and relish the savory flavors of your one-pan teriyaki chicken and broccoli bowl!
