1 lb (450g) boneless, skinless chicken breasts, diced

1 cup long-grain white rice (e.g., jasmine or basmati)

3 cups chicken broth

2 cups fresh broccoli florets

1 cup shredded cheddar cheese

1 medium onion, finely chopped

2 cloves garlic, minced

1 teaspoon olive oil

1 teaspoon paprika

½ teaspoon black pepper

½ teaspoon salt (adjust to taste)

¼ teaspoon crushed red pepper flakes (optional for heat)

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Chicken:

    - In a large pot or Dutch oven, heat the olive oil over medium-high heat.

      - Add the diced chicken and season with paprika, black pepper, and salt.

        - Sauté for about 5-7 minutes until the chicken is golden brown and cooked through.

          - Remove the chicken from the pot and set aside.

            Cook the Base:

              - In the same pot, add the chopped onion and sauté for 2-3 minutes until softened.

                - Stir in the minced garlic and cook for an additional 30 seconds, being careful not to burn it.

                  Combine and Simmer:

                    - Add the rice to the pot and stir for 1-2 minutes, allowing it to toast slightly.

                      - Pour in the chicken broth, and bring it to a boil.

                        - Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15 minutes.

                          Add Broccoli and Chicken:

                            - After 15 minutes, stir in the broccoli florets and the cooked chicken.

                              - Cover again and let it simmer for another 5-7 minutes, or until the rice is tender and has absorbed the liquid.

                                Cheesy Finish:

                                  - Remove the pot from heat and sprinkle the shredded cheddar cheese over the top.

                                    - Cover for a few minutes to allow the cheese to melt into a gooey layer.
