Ingredients
  

2 ripe peaches, pitted and diced

1 cup corn kernels (fresh or frozen)

1 small red onion, finely chopped

1 jalapeño, seeded and minced

1/2 cup black beans, rinsed and drained

1 avocado, diced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

1 teaspoon ground cumin

Salt and pepper to taste

8 small corn tortillas

Optional toppings: crumbled feta cheese, sour cream, or hot sauce

Instructions
 

In a mixing bowl, combine the diced peaches, corn kernels, red onion, jalapeño, black beans, avocado, and cilantro.

    Squeeze the juice of one lime over the mixture and sprinkle in the cumin, salt, and pepper. Gently toss to combine everything evenly.

      In a dry skillet over medium heat, warm the corn tortillas one at a time for about 30 seconds on each side or until they are pliable and just slightly toasted.

        To assemble the tacos, place a generous amount of the peach mixture onto each tortilla.

          If desired, add optional toppings such as crumbled feta, a dollop of sour cream, or a drizzle of hot sauce.

            Serve immediately with extra lime wedges on the side for squeezing.
