1 tablespoon sesame oil (for tossing)

1 cup shredded carrots

1 cup red cabbage, thinly sliced

1 bell pepper, julienned (any color)

1 cup edamame, shelled

1/4 cup green onions, sliced

1/4 cup fresh cilantro, chopped

Optional: 1/4 cup peanuts, chopped (for garnish)

For the Peanut Sauce:

1/3 cup creamy peanut butter

2 tablespoons tamari or soy sauce

1 tablespoon rice vinegar

1 tablespoon lime juice

1 tablespoon honey or maple syrup

1 teaspoon grated fresh ginger

1-2 teaspoons sriracha (adjust for spice level)

1-2 tablespoons warm water (to thin)

Instructions
 

Cook the Noodles:

    - Begin by bringing a large pot of salted water to a boil. Add the rice noodles and cook according to package instructions until al dente (usually about 4-6 minutes). Drain and rinse under cold water to stop the cooking process. Toss the noodles with sesame oil to prevent sticking.
