2 cups cooked chicken, shredded

1 cup fresh pineapple, diced

1/2 cup red bell pepper, finely chopped

1/4 cup red onion, finely chopped

1/2 cup Greek yogurt

2 tablespoons mayonnaise

1 tablespoon lime juice

1 teaspoon honey

Salt and pepper to taste

1/4 cup fresh cilantro, chopped (optional)

8 small lettuce leaves or endive leaves for serving

Slices of lime, for garnish

Prepare the Chicken: If you haven't already, cook and shred the chicken. Set aside to cool.
