1 ½ lbs beef sirloin, cut into bite-sized cubes

1 cup fresh pineapple juice

½ cup soy sauce

¼ cup brown sugar

3 cloves garlic, minced

1-inch piece ginger, grated

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

1 tablespoon sesame oil

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 onion, sliced

2 tablespoons vegetable oil

1 teaspoon ground black pepper

Salt to taste

Fresh cilantro, for garnish

Cooked jasmine rice, for serving

Instructions
 

Marinate the Beef: In a large bowl, combine the beef sirloin cubes, pineapple juice, soy sauce, brown sugar, minced garlic, grated ginger, and black pepper. Mix well, cover, and marinate in the refrigerator for at least 1 hour, preferably overnight for deeper flavor.

    Prepare the Vegetables: While the beef marinates, slice the red and yellow bell peppers and onion. Set aside.

      Sauté the Vegetables: In a large skillet or wok, heat the vegetable oil and sesame oil over medium-high heat. Add the sliced onion and sauté until translucent, about 2-3 minutes. Toss in the bell peppers and cook until just tender, another 2-3 minutes. Remove the vegetables from the skillet and set aside.

        Cook the Beef: In the same skillet, add the marinated beef (reserve the marinade) and cook over medium-high heat until browned and cooked through, about 5-6 minutes.

          Make the Glaze: Pour the reserved marinade into the skillet with the cooked beef, bringing it to a simmer. Stir in the cornstarch mixture to thicken the glaze. Allow it to cook for 2-3 minutes until it coats the beef nicely.

            Combine and Serve: Once the glaze has thickened, return the sautéed vegetables to the skillet. Stir everything together gently to combine. Remove from heat.

              Plate Up: Serve the pineapple glazed beef over a bed of jasmine rice. Garnish with fresh cilantro for a refreshing finish.
