Ingredients
  

1 whole turkey (around 12-14 pounds)

1 cup fresh pineapple juice

1 cup brown sugar

1/2 cup soy sauce

1/4 cup apple cider vinegar

1 teaspoon ground ginger

1 teaspoon ground cinnamon

4 cloves garlic, minced

1/4 teaspoon black pepper

1/4 teaspoon crushed red pepper flakes (optional for a spicy kick)

1/2 cup unsalted butter, melted

Fresh pineapple slices (for garnishing)

Fresh herbs (like rosemary and thyme) for stuffing and garnishing

Instructions
 

Prepare the Turkey:

    - Preheat your oven to 325°F (165°C).

      - Remove the turkey giblets and neck from the cavity. Pat the turkey dry with paper towels and place it in a roasting pan.

        Make the Pineapple Glaze:

          - In a saucepan over medium heat, combine the pineapple juice, brown sugar, soy sauce, apple cider vinegar, ground ginger, ground cinnamon, minced garlic, black pepper, and crushed red pepper flakes (if using).

            - Bring the mixture to a simmer, stirring occasionally until the sugar has dissolved, about 5-7 minutes.

              - Remove from heat, and stir in the melted butter until well combined.

                Season the Turkey:

                  - Rub the turkey thoroughly with salt and pepper, both inside and out.

                    - Stuff the cavity with fresh herbs and a couple of pineapple slices for added flavor.

                      Roast the Turkey:

                        - Using a basting brush, apply a generous amount of the pineapple glaze all over the turkey, making sure to cover the wings and legs.

                          - Place the turkey in the oven and roast for about 3 to 3.5 hours (or 13-15 minutes per pound), basting with the glaze every 30 minutes. If the skin starts to brown too quickly, cover it loosely with aluminum foil.

                            Check for Doneness:

                              - The turkey is done when the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
