Ingredients

1 cup canned pumpkin puree

2 cups granulated sugar

½ cup unsalted butter (cubed)

½ cup heavy cream

2 teaspoons vanilla extract

1 teaspoon pumpkin pie spice

½ teaspoon salt

3 cups white chocolate chips

1 cup chopped pecans or walnuts (optional)

⅓ cup toasted pumpkin seeds (for garnish)

Instructions

Prepare the Baking Dish: Line an 8-inch square baking dish with parchment paper, leaving some overhang for easy removal. Lightly grease the parchment paper with non-stick spray.

Mix Butter and Sugar: In a medium saucepan over medium heat, combine the sugar, cubed butter, and heavy cream. Stir continuously until the butter is melted and the mixture starts to boil.

Add Flavorings: Once boiling, reduce the heat to low and add the canned pumpkin puree, vanilla extract, pumpkin pie spice, and salt. Mix well until everything is thoroughly combined.

Incorporate Chocolate: Gradually add the white chocolate chips into the saucepan, stirring constantly until the chocolate is completely melted and the mixture is smooth and creamy.

Add Nuts: If using, fold in the chopped nuts gently into the fudge mixture, ensuring they are evenly distributed.

Pour into Baking Dish: Pour the fudge mixture into the prepared baking dish, spreading it out evenly with a spatula.

Garnish: Sprinkle the toasted pumpkin seeds over the top of the fudge, pressing them gently into the surface to secure them.

Chill: Refrigerate the fudge for at least 2 hours, or until it is firm and set.

Cut and Serve: Once set, lift the fudge out of the baking dish using the parchment paper overhang. Cut the fudge into squares and serve.

Store: Store any leftovers in an airtight container in the refrigerator for up to 2 weeks.
