For the Topping:

1/4 cup granola or crushed graham crackers (for a crunchy topping)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Prepare the Cream Cheese Filling: In a medium bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy. Add the optional pumpkin spice blend for extra flavor. Set aside.

      Make the Cookie Dough: In a large mixing bowl, beat the butter, granulated sugar, and brown sugar until creamy. Add the vanilla extract and eggs, mixing until combined.
