3 cups old-fashioned rolled oats

1 cup raw pumpkin seeds (pepitas)

1/2 cup walnuts, chopped

1/2 cup unsweetened coconut flakes

1/2 cup maple syrup

1/4 cup coconut oil, melted

1 teaspoon pure vanilla extract

1 tablespoon pumpkin pie spice

1/2 teaspoon sea salt

1/2 cup dried cranberries or raisins (optional)

1/2 cup chocolate chips (optional)

Preheat Your Oven: Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper for easy cleanup.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, pumpkin seeds, chopped walnuts, coconut flakes, pumpkin pie spice, and sea salt. Stir until well mixed.

      Mix Wet Ingredients: In a separate bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract until fully combined.

        Combine Ingredients: Pour the wet mixture over the dry ingredients. Stir well to ensure that all the dry ingredients are evenly coated with the wet mixture.

          Spread on Baking Sheet: Transfer the granola mixture onto the prepared baking sheet. Spread it out in an even layer, pressing it down slightly for clumps.

            Bake the Granola: Bake in the preheated oven for 25-30 minutes, stirring halfway through to ensure even cooking. Keep an eye on it in the last 10 minutes to prevent burning; it should be golden brown.
