Ingredients

2 cups sweet potatoes, peeled and cubed

1 cup pumpkin puree (canned or fresh)

1/2 cup brown sugar

1/4 cup maple syrup

1/4 cup milk (or non-dairy alternative)

1 teaspoon vanilla extract

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon ginger

1/4 teaspoon salt

1/2 cup pecans, chopped

1/2 cup rolled oats

3 tablespoons unsalted butter, melted

1/4 cup all-purpose flour (or gluten-free alternative)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare Sweet Potatoes: In a large pot, bring water to a boil and add the sweet potato cubes. Cook for about 15 minutes or until tender. Drain and let cool for a few minutes.

Mash the Mixture: In a large mixing bowl, combine the cooked sweet potatoes and pumpkin puree. Use a potato masher or fork to thoroughly mash until smooth.

Add Sweeteners and Spices: To the mashed mixture, stir in the brown sugar, maple syrup, milk, vanilla extract, cinnamon, nutmeg, ginger, and salt. Mix well until all ingredients are combined.

Prepare Topping: In a separate bowl, mix chopped pecans, rolled oats, melted butter, and flour until well combined. This will create a crumbly topping.

Assemble the Casserole: Transfer the sweet potato and pumpkin mixture into a greased 9x13-inch baking dish. Spread it evenly across the bottom. Sprinkle the pecan-oat topping generously over the sweet potato layer.

Bake: Place the casserole in the preheated oven and bake for about 30-35 minutes, or until the topping is golden brown and the filling is heated through.

Cool and Serve: Remove the casserole from the oven and allow it to cool for a few minutes. Scoop and serve warm and enjoy this comforting autumn dish!
