Quick Beef and Broccoli Stir-Fry for Dinner

1 lb (450g) beef flank steak, thinly sliced against the grain

2 cups broccoli florets

1 red bell pepper, sliced

2 tablespoons vegetable oil

3 cloves garlic, minced

1 teaspoon ginger, freshly grated

¼ cup soy sauce (low sodium recommended)

2 tablespoons oyster sauce

1 tablespoon cornstarch

1 tablespoon brown sugar

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions
 

Prepare the Marinade: In a medium bowl, combine the soy sauce, oyster sauce, cornstarch, and brown sugar. Mix well until the cornstarch is fully dissolved. Add the thinly sliced beef to the marinade and let it sit for at least 15 minutes to absorb the flavors.

    Blanch the Broccoli: While the beef is marinating, bring a pot of water to a boil. Add the broccoli florets and blanch for about 2 minutes until bright green and slightly tender. Drain and immediately transfer to an ice bath to stop the cooking process. Drain again and set aside.

      Stir-Fry the Beef: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated beef in a single layer and cook for about 2-3 minutes, stirring occasionally until browned. Remove the beef from the pan and set aside.

        Sauté Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil, followed by minced garlic and grated ginger. Sauté for about 30 seconds until fragrant. Then, add the sliced red bell pepper and blanched broccoli. Stir-fry for another 2-3 minutes until the vegetables are tender-crisp.

          Combine Everything: Return the cooked beef to the skillet and pour any remaining marinade over it. Toss everything together and cook for an additional 1-2 minutes, allowing the sauce to thicken and coat the ingredients.

            Garnish and Serve: Remove from heat and garnish with sliced green onions and sesame seeds. Serve immediately over steamed rice or noodles for a hearty meal.
