Quick Beef and Broccoli Stir-Fry with Rice

1 lb (450g) flank steak, thinly sliced against the grain

2 cups broccoli florets

1 medium carrot, julienned

1 red bell pepper, sliced

3 cloves garlic, minced

2 tablespoons fresh ginger, minced

3 tablespoons soy sauce (low sodium preferred)

2 tablespoons oyster sauce

1 tablespoon cornstarch

1 tablespoon sesame oil

2 tablespoons vegetable oil

1 cup cooked jasmine rice (or rice of your choice)

1 tablespoon sesame seeds (for garnish)

Salt and pepper to taste

Optional: green onions for garnish

Marinate the Beef: In a medium bowl, combine the sliced flank steak with 1 tablespoon soy sauce, 1 tablespoon cornstarch, and a pinch of salt and pepper. Mix well and let marinate for about 15 minutes while you prepare the vegetables.

    Prepare the Rice: If not already cooked, prepare the jasmine rice according to package instructions. Fluff with a fork and set aside.

      Stir-Fry the Vegetables: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the broccoli, carrot, and red bell pepper, and stir-fry for about 3-4 minutes until they begin to soften but retain their color. Add half of the minced garlic and ginger. Stir-fry for another minute until fragrant. Remove the vegetables from the pan and set aside.

        Cook the Beef: In the same pan, add another tablespoon of vegetable oil. Add the marinated beef in a single layer, allowing it to sear for about 2 minutes without stirring. Flip the beef and cook for an additional 1-2 minutes until browned and cooked through.

          Combine Everything: Add the vegetables back into the pan with the beef. Pour in the remaining soy sauce, oyster sauce, and sesame oil. Stir well to combine all the ingredients and cook for another 2-3 minutes until everything is heated through.

            Serve: Spoon the beef and broccoli stir-fry over a bed of fluffy jasmine rice. Sprinkle with sesame seeds and garnish with sliced green onions, if desired. Enjoy your delicious, quick meal!
