Quick Beef and Veggie Stir-Fry in 30 Minutes

1 lb (450g) beef sirloin, thinly sliced against the grain

2 tbsp soy sauce

1 tbsp oyster sauce

1 tsp cornstarch

2 tbsp vegetable oil

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup broccoli florets

1 medium carrot, julienned

3 garlic cloves, minced

1 inch ginger, minced

2 green onions, sliced

Salt and pepper to taste

Cooked rice or noodles (for serving)

Instructions
 

Marinate the Beef: In a medium bowl, combine the thinly sliced beef, soy sauce, oyster sauce, and cornstarch. Mix well and set aside to marinate for about 10 minutes while preparing the vegetables.

    Prep the Veggies: While the beef is marinating, wash and slice the bell peppers, broccoli, and carrot. Mince the garlic and ginger, and slice the green onions.

      Heat the Pan: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat until shimmering.

        Cook the Beef: Add the marinated beef to the hot skillet in a single layer. Sear the beef for 2-3 minutes without stirring until it’s browned, then flip and cook for an additional 1-2 minutes until just cooked through. Remove the beef from the skillet and set it aside.

          Stir-Fry the Vegetables: In the same skillet, add the remaining tablespoon of oil. Toss in the minced garlic and ginger, cooking for about 30 seconds until fragrant. Next, add the sliced red and yellow bell peppers, broccoli florets, and julienned carrot. Stir-fry for 4-5 minutes until the veggies are just tender but still crisp.

            Combine: Return the cooked beef to the skillet with the vegetables. Stir everything together, seasoning with salt and pepper to taste. Cook for an additional 1-2 minutes until the beef is heated through and well combined with the veggies.

              Garnish and Serve: Remove from heat, sprinkle with sliced green onions, and serve the stir-fry over hot cooked rice or noodles.
