1 lb (450g) beef sirloin, thinly sliced against the grain

2 cups seasonal veggies (bell peppers, broccoli, snap peas, and carrots, chopped)

3 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon cornstarch

1 tablespoon sesame oil

2 cloves garlic, minced

1-inch piece ginger, grated

2 tablespoons vegetable oil

1 tablespoon sesame seeds (optional, for garnish)

Cooked jasmine or basmati rice, for serving

Instructions
 

Prep the Beef: In a medium bowl, combine the sliced beef with cornstarch and 1 tablespoon of soy sauce. Mix well to coat. Let it marinate for about 10-15 minutes while you prepare the vegetables.

    Chop the Veggies: Prepare your seasonal veggies by washing and chopping them into bite-sized pieces. For a colorful stir-fry, include a variety of veggies like vibrant bell peppers, crunchy broccoli, tender snap peas, and sweet carrots.

      Make the Sauce: In a small bowl, whisk together the remaining soy sauce, oyster sauce, sesame oil, minced garlic, and grated ginger. Set aside.

        Heat the Pan: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Make sure the pan is hot before adding the beef.

          Cook the Beef: Add the marinated beef to the skillet in a single layer. Sear it for about 2-3 minutes without stirring, allowing it to develop a nice crust. Then stir-fry for another minute until just cooked through. Remove the beef from the skillet and set aside.

            Stir-Fry the Veggies: In the same skillet, add another tablespoon of vegetable oil. Toss in all the chopped veggies and stir-fry for about 3-4 minutes until they are tender yet still crisp.

              Combine Everything: Return the cooked beef to the skillet with the veggies. Pour in the prepared sauce and stir everything together. Cook for another 2 minutes, allowing the sauce to thicken slightly and coat the beef and vegetables.

                Serve: Serve the stir-fry hot over a bed of jasmine or basmati rice. Sprinkle with sesame seeds for an extra crunch, if desired.
