Quick Beef Tacos with Avocado and Salsa

1 lb ground beef (80/20)

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 packet taco seasoning (or homemade: 1 tsp chili powder, 1 tsp cumin, 1 tsp paprika, salt, and pepper)

1 cup beef broth (or water)

8 small corn tortillas

1 ripe avocado, sliced

1 cup fresh salsa (store-bought or homemade)

1 cup shredded lettuce

½ cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro for garnish (optional)

Lime wedges for serving

Instructions
 

Cook the Beef: In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté for about 3–4 minutes until translucent. Stir in the minced garlic and cook for an additional minute.

    Add Ground Beef: Increase heat to medium-high and add the ground beef. Cook, breaking it up with a spatula, until browned (about 4–5 minutes). Drain excess fat if necessary.

      Season: Sprinkle in the taco seasoning and pour in the beef broth. Stir well to combine. Let simmer for 5–7 minutes until the sauce thickens slightly.

        Warm Tortillas: While the beef is simmering, wrap the corn tortillas in foil and place them in the oven at 350°F (175°C) for about 10 minutes, or alternatively, warm them on a skillet for 30 seconds each side.

          Assemble Tacos: Once the beef is ready and tortillas are warm, start assembling your tacos. Place a generous spoonful of beef onto each tortilla, followed by a few slices of avocado, a scoop of salsa, shredded lettuce, and cheese.
