1 lb ground beef

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

8 small corn tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1 cup grated cheese (cheddar, Monterey Jack, or a blend)

For the Fresh Avocado Salsa:

2 ripe avocados, diced

1 small red onion, finely chopped

1 jalapeño, seeded and minced (optional)

1 lime, juiced

1/4 cup fresh cilantro, chopped

Salt to taste

Instructions
 

Prepare the Beef Filling:

    In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Cook the Beef:

        Add the ground beef to the skillet. Break it apart with a spatula, cooking until browned and fully cooked, about 5-7 minutes. Drain any excess fat.

          Season the Beef:

            Sprinkle the chili powder, cumin, smoked paprika, salt, and pepper into the skillet. Stir to combine and cook for another 2-3 minutes to allow the flavors to meld. Remove from heat.
