1 pound ground turkey

1 small zucchini, finely grated

1 small carrot, finely grated

1/2 bell pepper (any color), finely chopped

1/4 cup finely chopped onion

2 cloves garlic, minced

1/2 cup breadcrumbs (whole wheat or gluten-free)

1/4 cup grated Parmesan cheese (optional)

1 egg, lightly beaten

1 teaspoon dried oregano

1 teaspoon cumin

1/2 teaspoon smoked paprika

Salt and pepper, to taste

2 tablespoons fresh parsley, chopped (for garnish)

Olive oil (for cooking)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare the Veggies: In a medium bowl, combine the grated zucchini, grated carrot, chopped bell pepper, onion, and minced garlic. Mix well to ensure all the veggies are evenly distributed.

      Mix Ingredients: In a large mixing bowl, add the ground turkey, sautéed veggie mixture, breadcrumbs, Parmesan cheese (if using), egg, dried oregano, cumin, smoked paprika, salt, and pepper. Combine all the ingredients using your hands or a spatula until well mixed, but be careful not to over-mix, as this can make the meatballs tough.

        Form Meatballs: Using your hands, form the mixture into meatballs that are approximately 1 inch in diameter. Place them onto the prepared baking sheet, leaving a little space between each meatball.

          Bake the Meatballs: Drizzle a little olive oil over the meatballs or spray them lightly with cooking spray to help them brown. Bake in the preheated oven for 20-25 minutes, or until the meatballs are cooked through (internal temperature of 165°F/75°C) and golden brown on the outside.

            Serve: Remove from the oven and let them cool for a few minutes. Garnish with freshly chopped parsley before serving. Enjoy with marinara sauce, pasta, or a side salad for a complete meal!
