1 cup all-purpose flour

½ cup rolled oats

½ cup brown sugar (packed)

¼ cup granulated sugar

½ cup vegetable oil (or melted coconut oil)

1 large egg

1 tsp vanilla extract

1 tsp baking soda

½ tsp baking powder

½ tsp ground cinnamon

¼ tsp salt

½ cup chocolate chips (optional)

½ cup chopped nuts (walnuts or pecans, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Prepare the Zucchini: Grate the zucchini using a box grater. Place the grated zucchini in a clean kitchen towel and twist to remove as much moisture as possible.

      Mix Wet Ingredients: In a large bowl, whisk together the vegetable oil and sugars until well combined. Add the egg and vanilla extract, mixing thoroughly until smooth.

        Combine Dry Ingredients: In a separate bowl, mix the flour, oats, baking soda, baking powder, cinnamon, and salt.
