Roasted Butternut Squash and Goat Cheese Pasta

1 medium butternut squash, peeled and diced into 1-inch cubes

3 tablespoons olive oil

Salt and pepper, to taste

8 oz pasta (farfalle or penne works well)

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried sage

1 cup vegetable broth

4 oz goat cheese, crumbled

1/2 cup heavy cream

1/4 cup grated Parmesan cheese

1/4 cup toasted walnuts, roughly chopped

Fresh parsley, for garnish

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Roast the Butternut Squash: In a large bowl, combine the diced butternut squash with 2 tablespoons of olive oil, salt, and pepper. Spread the squash evenly on a baking sheet and roast in the preheated oven for 25-30 minutes, or until tender and caramelized, flipping halfway through.

      Cook the Pasta: While the squash is roasting, bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set aside.

        Sauté Garlic and Herbs: In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the minced garlic, dried thyme, and dried sage. Sauté for about 1-2 minutes until fragrant.

          Combine Ingredients: Add the roasted butternut squash to the skillet, pouring in the vegetable broth and heavy cream. Stir well to combine, and let the mixture simmer for about 5 minutes, allowing the flavors to meld.
