Roasted Sweet Potato and Garlic Hummus Tacos

2 medium sweet potatoes, peeled and diced

3 tablespoons olive oil

Salt and pepper, to taste

1 teaspoon smoked paprika

1 teaspoon cumin

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup tahini

2 cloves garlic, minced

2 tablespoons lemon juice

2-3 tablespoons water (more if needed)

Fresh cilantro, for garnish

8 small corn tortillas

Avocado slices, for topping

Feta cheese or vegan cheese (optional), for garnish

Lime wedges, for serving

Instructions
 

Roast the Sweet Potatoes: Preheat your oven to 425°F (220°C). In a large bowl, toss the diced sweet potatoes with 2 tablespoons of olive oil, smoked paprika, cumin, salt, and pepper. Spread them evenly on a baking sheet and roast for 25-30 minutes, or until they're tender and slightly caramelized, flipping halfway through.

    Prepare the Hummus: While the sweet potatoes are roasting, blend the chickpeas, tahini, minced garlic, lemon juice, and the remaining tablespoon of olive oil in a food processor. Add water a tablespoon at a time until you reach your desired consistency. Season with salt and adjust the taste as necessary.

      Warm the Tortillas: Heat a skillet over medium heat. Lightly toast the corn tortillas for 30 seconds on each side until they are warm and pliable.

        Assemble the Tacos: Spread a generous layer of the roasted garlic hummus on each tortilla. Top with a scoop of roasted sweet potatoes, a few slices of avocado, and a sprinkle of fresh cilantro. If using, add crumbled feta cheese or a sprinkle of your favorite vegan cheese.

          Serve: Serve the tacos immediately with lime wedges on the side for squeezing over the top.
