Salmon Skewers with Peach Salsa

For the Salmon Skewers:

1 pound fresh salmon fillet, skin removed and cut into 1-inch cubes

2 tablespoons olive oil

1 tablespoon soy sauce

1 teaspoon honey

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

Wooden or metal skewers, if using wooden skewers, soak them in water for 30 minutes

For the Peach Salsa:

2 ripe peaches, diced

1/4 red onion, finely chopped

1 jalapeño, seeds removed and finely chopped (optional, for heat)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt, to taste

Prepare the Marinade:

    In a mixing bowl, whisk together olive oil, soy sauce, honey, garlic powder, smoked paprika, salt, and pepper.

      Marinate the Salmon:

        Add the cubed salmon to the marinade and gently toss to coat. Cover and refrigerate for at least 30 minutes to allow flavors to meld.

            In a separate bowl, combine the diced peaches, red onion, jalapeño (if using), cilantro, lime juice, and salt. Mix well and set aside to allow the flavors to develop.
