Ingredients

6 large eggs

1 cup diced ham

1 cup shredded cheddar cheese (or your favorite cheese)

1/2 cup milk

1/2 cup diced bell peppers (any color)

1/4 cup finely chopped green onions

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and black pepper to taste

Cooking spray or muffin liners

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Lightly grease a muffin tin with cooking spray or line with muffin liners.

Whisk the Eggs: In a large mixing bowl, crack the eggs and whisk them together until well blended. Add in the milk and continue mixing until fully incorporated.

Season the Mixture: Sprinkle in the garlic powder, onion powder, salt, and black pepper. Whisk the mixture again to combine all the seasonings evenly.

Add the Fillings: Stir in the diced ham, shredded cheese, diced bell peppers, and chopped green onions. Mix until all the ingredients are evenly distributed.

Fill the Muffin Tin: Pour the egg mixture into the prepared muffin tin, filling each cup about 3/4 full. This will leave space for the muffins to rise as they bake.

Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the muffins are puffed and golden around the edges, and a toothpick inserted into the center comes out clean.

Cool and Serve: Once baked, remove the muffin tin from the oven and allow the muffins to cool in the pan for 5 minutes. Carefully run a knife around the edges to loosen them and transfer the muffins to a wire rack to cool slightly before serving.

Enjoy: These savory egg muffins can be served warm or at room temperature. They are perfect for breakfast, brunch, or even as a snack!
