3-4 lbs beef roast (chuck or ribeye preferred)

2 tablespoons olive oil

Salt and pepper, to taste

2 teaspoons garlic powder

2 teaspoons onion powder

1 teaspoon dried thyme

1 teaspoon dried rosemary

2 cups beef broth (low-sodium)

1 cup red wine (such as Cabernet Sauvignon or Merlot)

1 large onion, sliced

4 cloves garlic, minced

2 cups carrots, chopped into large pieces

2 cups potatoes, diced

1 tablespoon Worcestershire sauce

1 tablespoon cornstarch (optional, for thickening)

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 325°F (160°C).

    Season the Roast: Rub the beef roast generously with olive oil, salt, pepper, garlic powder, onion powder, thyme, and rosemary, ensuring it's evenly coated.

      Sear the Meat: In a large oven-safe skillet or Dutch oven, heat a tablespoon of olive oil over medium-high heat. Sear the roast on all sides until it develops a rich brown crust (about 4-5 minutes per side).

        Add Aromatics: Remove the roast from the pan and set aside. In the same pan, add sliced onions and minced garlic, sautéing until onions are translucent (about 3-4 minutes).

          Create the Gravy Base: Pour in the red wine to deglaze, scraping the bottom of the pan to release any flavorful bits. Add the beef broth and Worcestershire sauce. Bring to a simmer.

            Add Vegetables: Return the roast to the pan and surround it with chopped carrots and potatoes. This will enable the vegetables to soak up the delicious flavors while the beef roasts.
