Ingredients

1 lb boneless, skinless chicken breasts, sliced into thin strips

2 bell peppers (any color), sliced into strips

1 medium onion, sliced into thin wedges

3 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Tortillas (flour or corn, for serving)

Optional toppings: avocado, sour cream, cheese, salsa

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

Prepare the Chicken and Vegetables: In a large bowl, combine the sliced chicken, bell peppers, and onion.

Seasoning Mix: In a separate small bowl, whisk together the olive oil, chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper. Pour this mixture over the chicken and vegetables, then toss until everything is evenly coated.

Sheet Pan Arrangement: Spread the seasoned chicken and vegetable mixture evenly on a large sheet pan in a single layer, ensuring the chicken and vegetables do not overlap. This allows for even cooking.

Bake: Roast in the preheated oven for about 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and the vegetables are tender and slightly charred.

Add Lime Juice: Once cooked, remove the pan from the oven and squeeze fresh lime juice over the top, tossing lightly to incorporate.

Serve: Serve the fajitas warm with tortillas and your choice of optional toppings such as avocado slices, shredded cheese, sour cream, or salsa. Garnish with chopped cilantro for a fresh finish!
