Sheet Pan Honey Mustard Salmon and Asparagus

Ingredients
  

4 salmon fillets (6 oz each)

1 lb asparagus, trimmed

1/4 cup Dijon mustard

1/4 cup honey

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper, to taste

Lemon wedges, for serving

Fresh parsley, chopped, for garnish

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C) and line a sheet pan with parchment paper for easy cleanup.

    Prepare the Marinade: In a small bowl, whisk together the Dijon mustard, honey, olive oil, minced garlic, dried thyme, smoked paprika, and a pinch of salt and pepper until well combined.

      Marinate the Salmon: Place the salmon fillets in a shallow dish and pour half of the honey mustard marinade over them. Make sure to coat the fillets well. Allow them to marinate for at least 15 minutes while you prepare the asparagus.

        Prepare the Asparagus: On the prepared sheet pan, arrange the trimmed asparagus. Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat evenly.

          Roast in the Oven: Once the asparagus is prepped, push it to one side of the sheet pan and place the marinated salmon fillets on the other side. Pour the remaining honey mustard marinade over the salmon.

            Bake: Place the sheet pan in the preheated oven and roast for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork, and the asparagus is tender yet still bright green.

              Garnish and Serve: Remove the sheet pan from the oven, squeeze fresh lemon juice over the salmon and asparagus, and sprinkle with chopped parsley for a pop of color. Serve immediately with additional lemon wedges on the side.
