1 cup corn (fresh, canned, or frozen)

1 ripe avocado, diced

1 medium tomato, diced

1 cup romaine lettuce, chopped

½ cup red onion, finely chopped

½ cup fresh cilantro, chopped

1 lime, juiced

1 tsp cumin

1 tsp chili powder

Salt and pepper, to taste

½ cup shredded cheese (cheddar or Monterey Jack)

1 cup salsa or pico de gallo (for serving)

Sour cream or Greek yogurt (optional, for garnishing)

Instructions
 

Prepare the Base: If using rice or quinoa, cook according to package instructions. Once cooked, fluff with a fork and set aside.
