Ingredients

1 pound medium shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon garlic, minced

1 teaspoon ginger, minced

1 tablespoon soy sauce

1 tablespoon lime juice

Salt and pepper to taste

1 head of butter lettuce or Romaine, leaves separated

1 cup fresh strawberries, hulled and sliced

2 tablespoons honey

1 tablespoon rice vinegar

1 tablespoon sesame seeds

¼ cup chopped fresh cilantro (optional)

Lime wedges, for serving

Instructions

Prepare the Strawberry Glaze:

    - In a small saucepan over medium heat, combine the sliced strawberries, honey, and rice vinegar.

      - Cook for about 5-7 minutes, stirring occasionally until the strawberries break down and the mixture thickens slightly.

        - Remove from heat and let it cool slightly. Blend if you prefer a smoother texture. Set aside.

          Cook the Shrimp:

            - In a large skillet, heat olive oil over medium-high heat.

              - Add minced garlic and ginger, stirring for about 30 seconds until fragrant.

                - Add the shrimp to the skillet and cook for 2-3 minutes, or until they turn pink and opaque.

                  - Drizzle with soy sauce, lime juice, and season with salt and pepper. Toss to coat the shrimp evenly and cook for an additional minute. Remove from heat.

                    Assemble the Lettuce Wraps:

                      - Take a lettuce leaf and add a few shrimp to the center.

                        - Drizzle with the strawberry glaze and sprinkle sesame seeds over the top.

                          - Optionally, add a pinch of chopped cilantro for extra flavor.

                            Serve:

                              - Arrange the wraps on a serving platter with lime wedges on the side.

                                - Serve immediately and enjoy the fresh explosion of flavors!
