1 lb (450g) shrimp, peeled and deveined

2 tablespoons vegetable oil (canola or peanut oil)

1 red bell pepper, sliced into thin strips

1 yellow bell pepper, sliced into thin strips

1 green bell pepper, sliced into thin strips

3 garlic cloves, minced

1 inch piece of ginger, grated

3 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 tablespoon honey or agave syrup

1 teaspoon sesame oil

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

2 green onions, sliced (for garnish)

Cooked rice or noodles (for serving)

Instructions
 

Prepare the Sauce: In a small bowl, whisk together the soy sauce, oyster sauce (if using), honey or agave syrup, sesame oil, and red pepper flakes. Set aside.

    Sauté the Vegetables: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced bell peppers and stir-fry for about 3-4 minutes until they begin to soften but still retain their crunch. Remove the peppers from the skillet and set aside.

      Cook the Shrimp: In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and grated ginger, stir-frying until fragrant, about 30 seconds. Then, add the shrimp, cooking for about 2-3 minutes, or until they turn pink and opaque.

        Combine Ingredients: Return the sautéed bell peppers to the skillet. Pour the prepared sauce over the shrimp and vegetables. Toss everything together and cook for an additional 1-2 minutes until everything is well coated and heated through.

          Season and Serve: Taste and season with salt and pepper as needed. Serve the shrimp stir-fry over cooked rice or noodles, garnished with sliced green onions.
