Ingredients

1 pound large shrimp, peeled and deveined

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon garlic powder

Salt and pepper, to taste

8 small corn or flour tortillas

1 cup green cabbage, shredded

1/2 cup red cabbage, shredded

1/2 cup carrots, grated

1/4 cup fresh cilantro, chopped

1 lime, juiced

1 avocado, sliced (for topping)

Optional: hot sauce, for serving

Instructions

Prepare the Shrimp: In a mixing bowl, combine the shrimp, olive oil, chili powder, cumin, garlic powder, salt, and pepper. Toss well to ensure the shrimp are evenly coated with the spices.

Cook the Shrimp: Heat a large skillet over medium-high heat. Add the seasoned shrimp to the skillet in a single layer. Cook for 2-3 minutes on one side, until they turn pink and opaque. Flip and cook for an additional 2 minutes, being careful not to overcook. Remove from heat and set aside.

Make the Fresh Slaw: In a separate bowl, combine the shredded green and red cabbage, grated carrots, and chopped cilantro. Drizzle with lime juice, and season with a pinch of salt and pepper. Toss everything together until well mixed.

Warm the Tortillas: In the same skillet (or microwave), warm the tortillas until they're pliable and lightly toasted, about 30 seconds on each side.

Assemble the Tacos: On each tortilla, add a generous spoonful of the fresh slaw, followed by a few shrimp. Top with avocado slices and, if desired, a dash of hot sauce for extra heat.

Serve: Enjoy the tacos warm, garnished with extra lime wedges and cilantro if desired.
