Skillet Chicken Parmesan with Zucchini Noodles

Ingredients
  

2 boneless, skinless chicken breasts

1 cup breadcrumbs (preferably whole wheat)

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1 teaspoon garlic powder

Salt and pepper to taste

1 large egg, beaten

1 cup marinara sauce (store-bought or homemade)

1 cup shredded mozzarella cheese

2 medium zucchinis, spiralized into noodles

2 tablespoons olive oil

Fresh basil leaves for garnish (optional)

Instructions
 

Prepare the Chicken:

    - Preheat your skillet over medium heat. Flatten the chicken breasts to an even thickness using a meat mallet (or rolling pin) for uniform cooking.

      Bread the Chicken:

        - In a shallow dish, mix the breadcrumbs, grated Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper.

          - Dip each chicken breast into the beaten egg, allowing excess to drip off, then coat both sides in the breadcrumb mixture.

            Cook the Chicken:

              - In the preheated skillet, add 1 tablespoon of olive oil. Once hot, add the breaded chicken breasts and cook for about 5-7 minutes on each side, or until golden brown and cooked through (internal temperature reaches 165°F/74°C).

                - Remove the chicken and set aside on a plate.

                  Add Marinara and Cheese:

                    - In the same skillet, reduce the heat to low. Pour in the marinara sauce over the skillet, spreading it out evenly.

                      - Place the cooked chicken back into the skillet on top of the sauce. Sprinkle the shredded mozzarella cheese evenly over the chicken.

                        - Cover the skillet with a lid and cook for another 3-4 minutes until the cheese is melty and bubbly.

                          Prepare the Zucchini Noodles:

                            - While the chicken is finishing, heat the remaining 1 tablespoon of olive oil in another pan over medium heat.

                              - Add the spiralized zucchini noodles and sauté for 2-3 minutes until just tender but still al dente. Season with salt and pepper to taste.

                                Serve:

                                  - Plate the zucchini noodles, topping them with the chicken smothered in marinara and melted cheese.

                                    - Garnish with fresh basil leaves if desired. Serve immediately.
