1 lb (450g) Italian sausage (spicy or mild, your choice)

2 medium sweet potatoes, peeled and diced

1 large red bell pepper, diced

1 small onion, diced

2 cloves garlic, minced

1 tsp smoked paprika

1/2 tsp cumin

1/4 tsp cayenne pepper (optional, for heat)

Salt and black pepper to taste

2 tbsp olive oil

3 green onions, sliced (for garnish)

4 large eggs (optional, for topping)

Instructions
 

Cook the Sausage: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the Italian sausage and cook, breaking it apart with a wooden spoon, until browned and cooked through (about 5-7 minutes). Remove the sausage from the skillet and set aside, leaving any drippings in the pan.

    Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the diced sweet potatoes and cook for about 10 minutes, stirring occasionally, until they begin to soften and get a slight golden color.

      Add Aromatics: Stir in the diced onion, red bell pepper, and minced garlic. Season with smoked paprika, cumin, cayenne pepper (if using), salt, and black pepper. Cook for an additional 5-7 minutes or until the vegetables are tender and sweet potatoes are fully cooked.

        Combine: Return the cooked sausage to the skillet, stirring everything together well. Cook for another 2-3 minutes to ensure everything is heated through. Adjust seasoning if necessary.

          Optional Eggs: If you desire eggs on top, create small wells in the hash using a spoon and crack an egg into each well. Cover the skillet with a lid, and cook for about 5-6 minutes, or until the egg whites are set but yolks are still runny (or longer for firmer yolks).

            Serve: Remove from heat and garnish with sliced green onions. Serve warm, either directly from the skillet or plated.
