1 lb medium shrimp, peeled and deveined

2 tbsp olive oil

1 tbsp lime juice

1 tsp chili powder

1 tsp cumin

1 tsp smoked paprika

Salt and pepper to taste

1 large bell pepper (any color), sliced

1 medium onion, sliced

2 cloves garlic, minced

1/4 cup fresh cilantro, chopped (for garnish)

8 small flour tortillas

Optional toppings: sour cream, avocado, salsa, and shredded cheese

Instructions
 

Marinate the Shrimp: In a bowl, combine the shrimp with olive oil, lime juice, chili powder, cumin, smoked paprika, salt, and pepper. Toss to coat the shrimp evenly and let it marinate for 15 minutes.

    Prep the Pan: Heat a large cast-iron skillet or non-stick pan over medium-high heat. Once hot, add the sliced onion and bell peppers. Cook for about 5-7 minutes, stirring occasionally, until they are softened and slightly charred. Remove the vegetables from the skillet and set aside.

      Cook the Shrimp: In the same skillet, add the minced garlic. Sauté for about 30 seconds until fragrant, then add the marinated shrimp. Cook for 3-4 minutes, flipping halfway through, until the shrimp are pink and opaque.

        Combine and Heat: Return the cooked onion and bell pepper to the skillet with the shrimp. Toss everything together for another 1-2 minutes to heat through and blend the flavors.
