1 can (15 oz) corn, drained

1 can (14.5 oz) diced tomatoes with green chilies

1 medium onion, diced

2 cloves garlic, minced

4 cups low-sodium chicken broth

1 tbsp chili powder

1 tsp cumin

1 tsp smoked paprika

Salt and pepper to taste

2 cups tortilla chips, crushed (for serving)

1 avocado, diced (for garnish)

1 cup shredded cheddar cheese (for garnish)

Fresh cilantro, chopped (for garnish)

Sour cream (optional, for serving)

Instructions

Prep the Chicken: Place the boneless, skinless chicken breasts at the bottom of your slow cooker.

Add the Base Ingredients: Pour in the black beans, corn, diced tomatoes with green chilies, diced onion, and minced garlic.

Seasoning: Sprinkle the chili powder, cumin, smoked paprika, salt, and pepper over the mixture.

Add Broth: Pour the chicken broth over all the ingredients in the slow cooker, making sure everything is well-covered.

Cook: Cover the slow cooker and set it to cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is thoroughly cooked and tender.

Shred the Chicken: Once cooked, remove the chicken breasts from the slow cooker and shred them using two forks. Return the shredded chicken to the soup and stir well.

Serve: Ladle the soup into bowls and top with crushed tortilla chips, diced avocado, shredded cheese, fresh cilantro, and a dollop of sour cream if desired.
