Ingredients

4 bone-in, skin-on chicken thighs

1 head of garlic, cloves separated but unpeeled

1/2 cup grated Parmesan cheese

1/4 cup unsalted butter, melted

2 tablespoons olive oil

1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried rosemary)

1 teaspoon dried thyme

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

Zest of 1 lemon

Fresh parsley for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 300°F (150°C). This low and slow approach will ensure tender, flavorful chicken.

Prepare Chicken: Pat the chicken thighs dry with paper towels to enhance skin crispiness. Season generously with salt, pepper, onion powder, and paprika on both sides.

Make the Garlic Mixture: In a bowl, combine melted butter, olive oil, chopped rosemary, thyme, and lemon zest. Stir in the grated Parmesan cheese until well mixed.

Arrange Chicken: In a large, oven-safe skillet or baking dish, place the seasoned chicken thighs skin side up. Scatter the unpeeled garlic cloves around the chicken.

Coat with Mixture: Using a brush or spoon, generously coat the tops of the chicken thighs with the garlic-Parmesan mixture.

Roast the Chicken: Place the skillet in the preheated oven and roast for about 2 hours. This slow roasting will allow the chicken to become incredibly tender, while the garlic becomes sweet and caramelized.

Check for Doneness: About 15-20 minutes before the end of cooking, insert an instant-read thermometer into the thickest part of the chicken. It should read 165°F (75°C) when fully cooked.

Finish Under the Broiler: For an extra crispy skin, turn the oven to broil for the last 5-7 minutes of cooking. Watch closely to prevent burning. The tops should be golden and bubbly.

Rest and Serve: Remove the chicken from the oven and allow it to rest for about 10 minutes. This helps retain the juices. Serve hot, garnished with freshly chopped parsley, and your caramelized garlic cloves on the side for an aromatic touch!
