Smoked Paprika Chicken and Spinach Pasta

8 oz (225 g) spaghetti or your favorite pasta

1 lb (450 g) boneless, skinless chicken breast, diced

2 tablespoons smoked paprika

1 tablespoon olive oil

3 cloves garlic, minced

1 small onion, finely chopped

4 cups fresh spinach

1 cup cherry tomatoes, halved

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    Sear the Chicken: In a large skillet over medium-high heat, add the olive oil. Once hot, add the diced chicken breast and season with smoked paprika, salt, and pepper. Cook for about 6-8 minutes until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Aromatics: In the same skillet, reduce the heat to medium. Add chopped onion and minced garlic, cooking until the onion is translucent, about 3-4 minutes.

        Add Spinach and Tomatoes: Add the fresh spinach and halved cherry tomatoes to the skillet. Sauté for about 2-3 minutes until the spinach is wilted and the tomatoes are softened.

          Create the Sauce: Reduce the heat to low and pour in the heavy cream. Stir to combine, and then add the grated Parmesan cheese. Mix until the cheese melts and the sauce is creamy, adjusting the consistency with the reserved pasta water if needed.

            Combine Everything: Return the chicken to the skillet and then gently toss in the cooked pasta, ensuring everything is evenly coated with the sauce. Season with additional salt and pepper if desired.

              Serve: Divide the pasta among plates, garnish with fresh basil leaves, and sprinkle with extra Parmesan cheese if you like.
