1 cup apple cider (fresh or store-bought)

1 cup grated apple (about 1 medium apple, peeled)

For the Spiced Cream Cheese Frosting:

8 oz cream cheese, softened

½ cup unsalted butter, softened

2 cups powdered sugar

1 tsp vanilla extract

½ tsp ground cinnamon

A pinch of ground nutmeg

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a standard muffin pan with cupcake liners.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and allspice. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, use an electric mixer to cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.

        Add Eggs and Vanilla: Beat in the eggs one at a time, ensuring each is well incorporated. Mix in the vanilla extract.

          Blend in Dry Ingredients: Gradually add the dry ingredient mixture to the wet ingredients, alternating with the apple cider. Begin and end with the flour mixture. Mix until just combined.
