Spicy Baked Buffalo Chicken Wraps

2 cups cooked chicken, shredded (rotisserie or grilled)

1/2 cup buffalo sauce (adjust spice level to taste)

1/2 cup cream cheese, softened

1/2 cup shredded cheddar cheese

1/4 cup crumbled blue cheese (optional)

1/4 cup green onions, chopped

4 large flour tortillas or wraps

1 cup lettuce (shredded)

1/2 cup ranch or blue cheese dressing for serving

Olive oil spray (for baking)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.

    Mix the Chicken Filling: In a large mixing bowl, combine shredded chicken, buffalo sauce, cream cheese, shredded cheddar cheese, crumbled blue cheese (if using), and chopped green onions. Stir until well combined and the chicken is coated in the sauce.

      Assemble the Wraps: Lay out each tortilla on a clean surface. Place about a generous 1/2 cup of the buffalo chicken mixture in the center of each tortilla. Add a handful of shredded lettuce on top of the filling.

        Wrap it Up: Fold the sides of the tortilla inward, then roll it up from the bottom to the top, making sure to enclose the filling completely.

          Bake the Wraps: Place the wraps seam-side down on the prepared baking sheet. Lightly spray the tops with olive oil to help them crisp up during baking. Bake in the preheated oven for 20-25 minutes, or until the wraps are golden brown and crispy.

            Serve: Remove from the oven and let them cool for a couple of minutes. Slice each wrap in half and serve with ranch or blue cheese dressing on the side for dipping.
