Spicy Black Bean and Cheddar Sweet Potato Bake

4 medium-sized sweet potatoes, peeled and diced

1 can (15 oz) black beans, rinsed and drained

1 cup frozen corn (or fresh if available)

1 cup shredded sharp cheddar cheese, plus extra for topping

1 small red onion, diced

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

1 lime, cut into wedges (for serving)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare Sweet Potatoes: In a large bowl, toss the diced sweet potatoes with olive oil, cumin, smoked paprika, cayenne pepper, salt, and pepper until evenly coated.

      Roast Sweet Potatoes: Spread the sweet potatoes in an even layer on a baking sheet. Roast them in the preheated oven for about 25-30 minutes, or until tender and slightly caramelized, tossing halfway through for even cooking.

        Sauté Aromatics: While the sweet potatoes are roasting, heat a skillet over medium heat. Add a little olive oil if needed, then sauté the diced red onion for about 4-5 minutes until softened. Add the minced garlic and cook for another minute until fragrant.

          Combine Ingredients: In a large mixing bowl, combine the roasted sweet potatoes, sautéed onion and garlic, black beans, corn, and 1 cup of shredded cheddar cheese. Gently mix to incorporate all ingredients without mashing the sweet potatoes.

            Transfer to Baking Dish: Spoon the mixture into a greased 9x13 inch baking dish, spreading it evenly. Top with additional shredded cheddar cheese for a cheesy crust.

              Bake: Return the dish to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.

                Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh cilantro and serve with lime wedges on the side for extra zest!
