200g noodles (your choice: egg, rice, or wheat)

4 tablespoons vegetable oil

6 cloves garlic, minced

2-3 red chilies, finely sliced (adjust to taste)

1 teaspoon ginger, minced

3 tablespoons soy sauce

2 tablespoons chili paste (such as sambal oelek or gochujang)

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon sugar

1 red bell pepper, thinly sliced

1 cup bok choy or spinach, roughly chopped

2 green onions, chopped

1 tablespoon sesame seeds (for garnish)

Fresh cilantro (for garnish)

Instructions
 

Cook the Noodles: Bring a pot of salted water to a boil. Add the noodles and cook according to package directions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Sauce: In a small bowl, mix together the soy sauce, chili paste, rice vinegar, sesame oil, and sugar until well combined. Set aside.

      Sauté the Aromatics: In a large skillet or wok, heat the vegetable oil over medium heat. Add the minced garlic and sliced chilies. Sauté for about 1-2 minutes, until fragrant and slightly golden, being careful not to burn the garlic.

        Add the Vegetables: Toss in the minced ginger, red bell pepper, and bok choy (or spinach). Stir-fry for 3-4 minutes, or until the vegetables are tender but still vibrant.

          Combine Noodles and Sauce: Add the cooked noodles to the skillet, followed by the prepared sauce. Toss everything together, ensuring the noodles are evenly coated with the sauce and heated through, about 2-3 minutes.
