Spinach and Feta Stuffed Chicken Breasts

4 boneless, skinless chicken breasts

2 cups fresh spinach, chopped

1 cup feta cheese, crumbled

2 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

1/4 cup cream cheese, softened

1/4 cup grated Parmesan cheese

1 tablespoon olive oil

Salt and pepper to taste

1 teaspoon dried oregano

1/2 teaspoon lemon zest

Fresh lemon wedges for serving

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Filling: In a medium skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute until fragrant. Add the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.

      Mix the Filling: In a bowl, combine the sautéed spinach and garlic, crumbled feta cheese, cream cheese, grated Parmesan, red pepper flakes (if using), oregano, and lemon zest. Mix until all the ingredients are well incorporated. Season with salt and pepper to taste.

        Prepare the Chicken: While the filling cools, prepare the chicken breasts. Using a sharp knife, carefully make a pocket in each chicken breast by slicing horizontally, taking care not to cut all the way through.

          Fill the Chicken: Generously stuff each chicken breast with the spinach and feta mixture. Use toothpicks to secure the opening if needed.

            Sear the Chicken: In the same skillet you used for the spinach, add a bit more olive oil (if needed) and increase the heat to medium-high. Sear each stuffed chicken breast for about 3-4 minutes per side, until golden brown.

              Bake: Transfer the seared chicken breasts to a baking dish and cover with foil. Bake in the preheated oven for 20-25 minutes, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through.
